One-Night-Only Pairing Dinner
We are pleased to present a special pairing event featuring Dassai, the acclaimed sake brand highly regarded both in Japan and around the world, together with an authentic kaiseki dinner.
Guests will enjoy two types of Junmai Daiginjo Dassai BLUE, crafted exclusively with Yamada Nishiki rice grown in the United States, as well as the seasonal Junmai Daiginjo “Dassai 39 Hanabie.” These premium sakes will be paired with a refined, multi-course kaiseki menu prepared by Unkai Japanese Restaurant.
On the evening, we are honored to welcome Mr. Naoya Matsufuji, Brand Director of Dassai, who will share insights into the philosophy and craftsmanship behind the brand.

Brewed exclusively with American-grown Yamada Nishiki, this sake offers a light aroma and a well-balanced taste. Polished to 35%, traditionally considered the optimal balance point in Junmai Daiginjo competitions, it embodies the refined standard of Dassai Blue. - DASSAI BLUE 50 from NY
With a clean sweetness of rice accompanied by fruity aromas, Dassai Blue 50 offers a rich body with a crisp finish. Polished to 50%—the benchmark of Junmai Daiginjo—this is the standard of the Dassai Blue line. - DASSAI 39 Hanabie (Spring Chilled Sake)
This DASSAI is characterized by a bright, spring-inspired bouquet and an elegantly light, refreshing palate.
Naoya Matsufuji
Brand Director of Dassai
Born in 1983 in Yamaguchi, he joined Asahi Shuzo (Dassai) in 2008 as a sake brewer. He later became Plant Manager of the headquarters brewery before moving to sales, where he led the U.S. brewery project.
Appointed Director and General Manager of Sales in 2018, he became CTO of DASSAI USA in 2022 and relocated to the U.S. in 2023 to oversee production at the New York brewery, establishing the foundation of “DASSAI BLUE.”
Since returning to Japan in 2024, he has served as Brand Director for Dassai, overseeing domestic and international operations.


DASSAI BLUE
Crafted at the Dassai Blue Sake Brewery, which opened in New York in September 2023, Dassai Blue is brewed using pristine water from the Hudson Valley and Yamada Nishiki rice, the most prized sake rice variety. This premium Junmai Daiginjo reflects Dassai’s dedication to quality, reimagined in a New York setting.
Dassai Blue 50 from NY, available exclusively on this day, is made with Yamada Nishiki polished to 50%. It offers gentle fruity aromas, a delicate natural sweetness from the rice, and a soft, well-balanced profile enhanced by its lower alcohol content.
