A finely polished Junmai Daiginjo made with Yamada Nishiki rice milled down to 39%. It offers a refined, aromatic profile with a crisp finish and well-defined, balanced flavors.


DASSAI BLUE
Crafted at the Dassai Blue Sake Brewery, which opened in New York in September 2023, Dassai Blue is brewed using pristine water from the Hudson Valley and Yamada Nishiki rice, the most prized sake rice variety. This premium Junmai Daiginjo reflects Dassai’s dedication to quality, reimagined in a New York setting.
Dassai Blue 50 from NY, available exclusively on this day, is made with Yamada Nishiki polished to 50%. It offers gentle fruity aromas, a delicate natural sweetness from the rice, and a soft, well-balanced profile enhanced by its lower alcohol content.
